Fused Vision/X-ray Screening System Detects Missed Bone Fragments in Food Products Georgia Tech researchers in cooperation with Cagle’s Inc., Sylvest Farms, and Spectral Fusion Technologies have developed a novel fused imaging and x-ray system to find missed fan bones in deboned poultry products. Spectral Fusion manufactures an advanced x-ray screening system that is capable of detecting missed bone fragments in product, but the accuracy of detecting fan bones is less than 30 percent. The fused system is more than 90 percent effective and enables Spectral Fusion to tune its x-ray system for more effective detection of other bone fragments. It will also give Spectral Fusion improved food-safety screening ability and particularly enhance the company’s ability to meet rigorous bone-free product standards imposed by fast-food companies such as McDonald’s, Burger King, Wendy’s, etc. Cagle’s and Sylvest have provided their expertise and poultry processing plants for testing of the system and are anxiously awaiting access to the first commercial units. Spectral Fusion, based in Birmingham, England, donated the x-ray unit to Tech, while the image screening system is funded with research dollars provided by Georgia’s Traditional Industries Program for Food Processing. The fused system involves intellectual property, which Spectral Fusion is in the process of licensing. . . . . . . . . . . . . . . . . . . . . UGA Hosts Sanitation Program Improvement Workshop The Georgia Center for Continuing Education on the University of Georgia campus in Athens, Georgia, will host the American Meat Science Association’s “Improving Your Sanitation Program” for meat and poultry processors on November 29-30. This two-day, comprehensive workshop was developed in cooperation with UGA and Virginia Tech food scientists, and is designed for anyone responsible for meat or poultry processing plant sanitation, including quality control supervisors, HACCP coordinators, plant engineers, and production managers. The course will address such topics as:
